Dr. Poulos asked if sanitary inspections conducted by the Health Department were typically
code enforcement or educational inspections. Mr. Bohner stated that although violations
of the Illinois Department of Public Health Food Service Sanitation Code are noted during
nearly all health inspections, the majority of every each inspection is dedicated to food
safety education with the owner or manager. Mr. Bohner recently included a line on each
inspection report to document the type of critical analysis education that the inspector and
operator discuss during their inspection. In addition, since 2015 IDPH requires that every
food worker in a food handling establishment is either certified in food service sanitation
or receive basic food worker training.
